Ingredients

  • 3 garlic cloves, minced
  • 2 large onions, finely chopped
  • 2 Tbsp. olive oil
  • 2 lb. lean ground beef
  • 1 (8 oz.) can stewed tomatoes
  • 1 (4 oz.) can green chilies
  • 2 c. beef stock
  • 1 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In a large skillet, slowly brown the garlic and onions in olive oil; stir and cook until tender.
  2. Raise heat, add ground beef, and cook until browned and done.
  3. Add stewed tomatoes, green chilies, beef stock, chili powder, cumin, salt, and pepper.
  4. Cover and reduce heat to simmer.
  5. Cook for about 45 minutes more, stirring occasionally.
