Ingredients

  • 2 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons nutmeg
  • 1 1/2 teaspoons ground cloves
  • 3 cups sugar
  • 4 eggs
  • 2/3 cup water
  • 1 (16 oz.) can pumpkin
  • 1 cup oil
  • 1 teaspoon vanilla
  • 2 cups chopped dates or raisins
  • 1 1/2 cups chopped nuts

Instructions

  1. Sift dry ingredients and put aside.
  2. Blend oil and sugar.
  3. Add eggs, one at a time, and beat after each one.
  4. Add pumpkin, water, vanilla, and flour mixture.
  5. Stir in dates and nuts.
  6. Pour batter into 4 greased and floured 1-pound coffee cans, filling about 2/3 full.
  7. Bake at 350°F (175°C) for 1 hour.
  8. Check at 45 minutes for doneness.
  9. Cool in cans and rest on sides when cooling.
