Ingredients

  • 4 oz sliced bacon
  • 2 Tbsp butter
  • 2 c chopped yellow onion
  • 4 Tbsp flour
  • 4 c chicken stock
  • 2 large uncooked potatoes, diced
  • 1 c dairy half and half
  • 4 c cooked corn
  • 3/4 tsp pepper
  • 1 large red or yellow bell pepper
  • 3 scallions

Instructions

  1. Wilt the bacon in a large pot; add butter to melt.
  2. Add chopped onions and wilt on low heat for 10 minutes.
  3. Stir in flour and cook for an additional 5 minutes.
  4. Add chicken stock and diced potatoes.
  5. Cook over low heat for 12 to 15 minutes until potatoes are tender.
  6. Stir in half and half, cooked corn, pepper, and a dash of salt.
  7. Cook for 7 minutes, stirring occasionally.
  8. Add chopped bell pepper and scallions.
  9. Cook for another 5 minutes.
  10. Serve garnished with cilantro.
