Ingredients

  • 1 1/2 lb lean ground beef
  • 1 egg
  • 3/4 cup Italian bread crumbs
  • 1/2 cup finely chopped onion
  • 15 oz can tomato sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups (8 oz) shredded mozzarella cheese
  • green pepper rings

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine ground beef, egg, Italian bread crumbs, chopped onion, 1/3 cup tomato sauce, salt, and pepper; mix well.
  3. Shape the mixture into a flat rectangle, about 10 x 12 inches, on a piece of wax paper.
  4. Sprinkle 1 1/2 cups shredded mozzarella cheese evenly over the meat mixture.
  5. Starting from the shortest end, roll up jelly roll fashion and press the ends to seal.
  6. Bake in a shallow baking pan for 1 hour.
  7. Drain off excess fat.
  8. Pour remaining tomato sauce over the roll.
  9. Garnish with remaining 1/2 cup shredded cheese and green pepper rings.
  10. Bake an additional 5 minutes before serving.
