Meatballs Rellenos
Ingredients
- 1 lb. ground beef ⓘ
- 1/2 c. finely crushed tortilla chips ⓘ
- 1 c. picante sauce, divided ⓘ
- 1 egg, beaten ⓘ
- 2 Tbsp. chopped fresh cilantro, less if desired
- 3/4 tsp. ground cumin, divided ⓘ
- 4 oz. Monterey Jack cheese ⓘ
- 1 medium onion, chopped ⓘ
- 1/2 clove garlic, minced ⓘ
- 1 Tbsp. oil ⓘ
- 2 c. water ⓘ
- 1 c. rice, uncooked (not minute) ⓘ
- 1 can diced tomatoes (do not drain) ⓘ
Instructions
- Combine beef, chips, 1/3 cup picante sauce, egg, cilantro (reserving just a bit) and 1/4 teaspoon cumin and mix well.
- Slice cheese into 12 cubes.
- Dividing beef mixture into 12 equal portions and form into a meatball around a cube of cheese.
- Place on a shallow rimmed baking sheet that has been lined with aluminum foil and bake meatballs 16 minutes at 450°.
