Ingredients
- 3 cups frozen peas and carrots ⓘ
- 1 cup frozen chopped onion ⓘ
- 1 cup frozen chopped green pepper
- 2 teaspoons dried thyme ⓘ
- 2 teaspoons sweet Hungarian paprika ⓘ
- olive oil flavored vegetable cooking spray
- 4 cups frozen hash browns ⓘ
- 2/3 cup lite Ricotta cheese ⓘ
- 1/4 teaspoon salt
- 2 cups drained canned black-eyed peas ⓘ
- 1 cup diced tomato ⓘ
- 1 (8 oz) can no-salt-added tomato sauce ⓘ
Instructions
- Combine the thawed peas and carrots, chopped onion, chopped green pepper, dried thyme, and paprika; stir well.
- Spoon the vegetable mixture into a 15 x 10 x 1-inch jellyroll pan coated with cooking spray; spray the vegetables lightly with cooking spray.
- Bake uncovered at 400°F for 20 minutes, stirring after 10 minutes; then set aside.
