Ingredients

  • 3 cups frozen peas and carrots
  • 1 cup frozen chopped onion
  • 1 cup frozen chopped green pepper
  • 2 teaspoons dried thyme
  • 2 teaspoons sweet Hungarian paprika
  • olive oil flavored vegetable cooking spray
  • 4 cups frozen hash browns
  • 2/3 cup lite Ricotta cheese
  • 1/4 teaspoon salt
  • 2 cups drained canned black-eyed peas
  • 1 cup diced tomato
  • 1 (8 oz) can no-salt-added tomato sauce

Instructions

  1. Combine the thawed peas and carrots, chopped onion, chopped green pepper, dried thyme, and paprika; stir well.
  2. Spoon the vegetable mixture into a 15 x 10 x 1-inch jellyroll pan coated with cooking spray; spray the vegetables lightly with cooking spray.
  3. Bake uncovered at 400°F for 20 minutes, stirring after 10 minutes; then set aside.
