Ingredients

  • 2 Tbsp. finely chopped onion
  • 1 lb. ground beef
  • dash of salt
  • dash of pepper
  • 2 tsp. sugar
  • chili powder to taste
  • 3 Tbsp. Open Pit barbecue sauce
  • Brooks ketchup
  • 1 head lettuce
  • 1 pkg. Velveeta, shredded

  1. In a skillet, brown finely chopped onion and ground beef.
  2. Add salt and pepper to taste.
  3. Drain well.
  4. Stir in sugar and cook for 1 minute.
  5. Add chili powder and cook for another minute.
  6. Mix in barbecue sauce.
  7. Add ketchup just enough to color the meat and make it a little dry.
  8. Cook for 2 minutes, then remove from heat.
  9. Chop the well-drained head of lettuce and add shredded Velveeta cheese.
  10. Add only enough dressing to lightly cover the lettuce mixture.
  11. Add the cooked meat to the lettuce mixture and toss gently.
  12. Crumble chips on top and serve immediately to prevent sogginess.
