Mexicali Skillet

Ingredients
- 1 medium onion, chopped ⓘ
- 1 Tbsp. cooking oil ⓘ
- 1 (16 oz.) can tomatoes ⓘ
- 1 (4 oz.) can diced green chili peppers ⓘ
- 1 (15 oz.) can pinto beans ⓘ
- 1 c. water ⓘ
- 2/3 c. long grain rice ⓘ
- 1 tsp. chili powder ⓘ
- 1 (5 oz.) pkg. small smoked sausage links or 16 cocktail frankfurters ⓘ
- 1 c. shredded Cheddar cheese ⓘ
Instructions
- In a 10-inch skillet, cook the chopped onion in cooking oil until tender, but not brown.
- Cut up the tomatoes from the can.
- Add undrained tomatoes, undrained pinto beans, diced green chili peppers, water, and uncooked rice to the skillet.
- Stir in chili powder and cook until the rice is tender and the flavors are combined.
