Ingredients

  • 1 medium onion, chopped
  • 1 Tbsp. cooking oil
  • 1 (16 oz.) can tomatoes
  • 1 (4 oz.) can diced green chili peppers
  • 1 (15 oz.) can pinto beans
  • 1 c. water
  • 2/3 c. long grain rice
  • 1 tsp. chili powder
  • 1 (5 oz.) pkg. small smoked sausage links or 16 cocktail frankfurters
  • 1 c. shredded Cheddar cheese

Instructions

  1. In a 10-inch skillet, cook the chopped onion in cooking oil until tender, but not brown.
  2. Cut up the tomatoes from the can.
  3. Add undrained tomatoes, undrained pinto beans, diced green chili peppers, water, and uncooked rice to the skillet.
  4. Stir in chili powder and cook until the rice is tender and the flavors are combined.
