Ingredients

  • 1 Tbsp. flour
  • 3 tsp. salt
  • 1/2 tsp. soda
  • 2 eggs, beaten
  • 1/2 c. salad oil
  • 1 c. buttermilk
  • 1 small can creamed corn
  • 3 to 6 chopped jalapeno peppers
  • 1/2 green pepper, chopped
  • 4 to 5 green onions, chopped
  • 1 1/2 c. grated Cheddar cheese

Instructions

  1. Mix cornmeal, flour, salt, and soda.
  2. Add buttermilk, eggs, oil, and creamed corn.
  3. Beat and mix well.
  4. Stir in chopped jalapeño peppers, green pepper, and green onions.
