Ingredients

  • 1 lb. lean ground beef
  • 1 1/4 cup yellow cornmeal
  • 1 cup milk
  • 3/4 teaspoon salt
  • 1/2 cup bacon drippings or oil
  • 2 large eggs
  • 1/2 teaspoon baking soda
  • 1 (No. 303) can cream-style corn
  • 1 large onion
  • 1/2 lb. rat cheese (queso) or grated cheese
  • 2 to 4 jalapeno peppers

Instructions

  1. Combine cornmeal, milk, salt, bacon drippings, eggs, soda, and cream-style corn in a mixing bowl. Set aside.
  2. Saute ground beef in a skillet. Drain on paper towels.
  3. Grease a large black iron skillet and heat it. Sprinkle the bottom with a thin layer of cornmeal and brown slightly.
  4. Pour half of the batter into the hot skillet.
  5. Sprinkle cheese evenly over the batter, then add the cooked ground beef, chopped onion, and chopped jalapenos.
  6. Pour the remaining batter over the toppings.
  7. Bake at 350°F (175°C) for 45 to 60 minutes until a toothpick inserted in the center comes out clean.
