Mexican Hot Corn Bread is a flavorful, cheesy bread with green peppers, onions, and spicy Ortega peppers, perfect as a side dish for family gatherings or casual dinners.

Ingredients

  • 3/4 cup corn meal
  • 1 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 2 eggs
  • 1/2 cup buttermilk
  • 1/4 cup oil
  • 1/2 cup diced green pepper
  • 1/2 cup diced onions
  • 1/2 cup creamed corn
  • 1 (4 oz.) Ortega peppers, diced
  • 1 1/2 cups grated Cheddar cheese

Instructions

  1. Mix all ingredients except the cheese.
  2. Line a cast-iron skillet with foil and spray with Pam.
  3. Pour half of the batter into the skillet.
  4. Cover this layer with half of the grated Cheddar cheese.
  5. Add the remaining batter over the cheese layer.
  6. Cover the top with the remaining cheese.
  7. Bake at 375°F for 25 minutes or until the center is firm and done.
  8. Cut into small cubes and serve warm or at room temperature.
