Ingredients

  • 5 or 6 jalapeno peppers, chopped
  • 1 cup meal
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1/2 cup oil
  • 1 teaspoon baking soda
  • 1 cup corn
  • 1/2 cup buttermilk
  • 1/2 cup water
  • 1 medium onion, chopped
  • 1/4 pound grated sharp Cheddar cheese
  • 1/2 teaspoon sugar

Instructions

  1. Mix all ingredients well.
  2. Pour the batter into a greased baking dish.
  3. Bake at 400°F (200°C) for 30 to 35 minutes until golden brown.
