Ingredients

  • 1 lb. ground beef
  • 17 oz. whole kernel corn, drained
  • 15 oz. tomato sauce
  • 1 c. picante sauce
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. ground cumin
  • 16 oz. cottage cheese
  • 2 eggs
  • 1/4 c. grated Parmesan
  • 1 tsp. oregano
  • 1/2 tsp. garlic salt
  • 12 corn tortillas
  • 1 c. shredded Cheddar

Instructions

  1. Brown the ground beef; drain excess fat.
  2. Add drained corn, tomato sauce, picante sauce, chili powder, and cumin to the beef.
  3. Simmer the mixture, stirring frequently, for 5 minutes.
  4. In a separate bowl, combine cottage cheese, eggs, grated Parmesan, oregano, and garlic salt; mix well.
  5. Spray a 9 x 13-inch baking dish with cooking spray or lightly grease it.
  6. Arrange 6 tortillas on the bottom and up the sides of the prepared dish.
  7. Spread half of the meat mixture over the tortillas.
  8. Spoon the cheese mixture over the meat layer.
  9. Arrange the remaining tortillas over the cheese layer.
  10. Top with the remaining meat mixture.
  11. Bake at 375°F (190°C) for 30 minutes.
  12. Sprinkle shredded Cheddar cheese on top before serving.
