  • 1 c. peeled, diced potatoes
  • 1 c. carrots
  • 1/2 c. onion
  • 1/2 c. celery
  • 3 c. chicken broth
  • 3 c. cubed Velveeta cheese
  • 2 c. milk
  • 1/2 c. flour
  • 1/4 tsp. pepper

Instructions

  1. Combine diced potatoes, carrots, onion, and celery in a microwave-safe dish.
  2. Cover and cook for 10 minutes in the microwave; drain and mash the vegetables.
  3. Add chicken broth, Velveeta cheese, milk, flour, and pepper to the mashed vegetables.
  4. Microwave on 50% power for 20 minutes, stirring occasionally.
