Ingredients

  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped green pepper
  • 2 tablespoons margarine or butter
  • 1 cup hot water
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1/3 cup uncooked long grain rice
  • 1 tablespoon instant chicken bouillon

Instructions

  1. Combine chopped onion, celery, green pepper, and margarine in a 1-quart casserole.
  2. Microwave on High (100%) until vegetables are tender-crisp, 3 to 5 minutes.
  3. Stir in hot water, drained mushrooms, uncooked rice, and instant chicken bouillon; cover.
  4. Microwave on High for 5 minutes.
  5. Reduce power to Medium; microwave until liquid is absorbed, 10 to 12 minutes.
  6. Let stand, covered, for 5 minutes.
  7. Fluff with a fork before serving.
