Ingredients

  • 8 large cabbage leaves
  • 1/2 cup water
  • 1 pound lean ground beef
  • 1 cup cooked rice
  • 1/4 cup chopped onion
  • 1 egg
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (10 3/4 oz.) condensed tomato soup
  • 1 (8 oz.) can sauerkraut, drained
  • toothpicks

Instructions

  1. Place cabbage leaves and water in a large bowl and cover with plastic wrap.
  2. Microwave on High for 5 minutes to soften the cabbage leaves.
  3. In a bowl, mix ground beef, cooked rice, chopped onion, egg, salt, pepper, and 2 tablespoons of condensed tomato soup.
  4. Divide the meat mixture among the softened cabbage leaves.
  5. Fold in the sides of each leaf and roll up, securing with toothpicks.
  6. Place the cabbage rolls seam side down in a 12 x 18-inch baking dish.
  7. Mix remaining tomato soup and drained sauerkraut; pour over the cabbage rolls.
  8. Cover the dish loosely with plastic wrap.
  9. Microwave on High for 12 to 17 minutes, turning the dish once during cooking.
