Ingredients

  • 1 1/2 lb Italian sausage, casings removed
  • 1 cup chopped onion
  • 6 cups beef broth
  • 1/2 cup dry red wine
  • 1 can (14.5 oz) tomatoes
  • 2 cups sliced carrots
  • 1 cup thinly sliced celery
  • 1/4 cup ketchup
  • 1 teaspoon Italian seasoning
  • 2 cloves sliced garlic
  • 2 cups zucchini
  • 1/2 lb frozen cheese tortellini
  • 1 medium green pepper, chopped
  • 1/4 cup chopped fresh parsley
  • grated Romano cheese
  • 1/2 teaspoon garlic powder

Instructions

  1. Break the sausage into small pieces and cook in a large pot over medium heat.
  2. Remove the cooked sausage and drain.
  3. In the same pot, sauté onions until tender.
  4. Add garlic powder, beef broth, red wine, tomatoes, carrots, celery, ketchup, and Italian seasoning.
  5. Bring to a boil and simmer, uncovered, for 30 minutes.
  6. Skim off any fat from the surface.
  7. Stir in the cooked sausage, zucchini, green pepper, parsley, grated Romano cheese, and garlic powder.
  8. Simmer, covered, for 35 to 40 minutes until the tortellini is tender.
