Minestrone
Minestrone is a hearty Italian soup brimming with fresh vegetables and savory flavors. Ingredients
- 1/4 lb. salt pork, diced ⓘ
- 3 large onions, chopped ⓘ
- 2 cloves garlic, crushed ⓘ
- 1 lb. zucchini, sliced ⓘ
- 1/2 lb. cabbage, cut in chunks ⓘ
- 1 large bay leaf ⓘ
- 2 qt. water ⓘ
- 1 (10 oz.) pkg. frozen green beans ⓘ
- 1 (28 oz.) can tomatoes ⓘ
- 1 c. thin spaghetti ⓘ
- salt and pepper to taste ⓘ
- grated Parmesan cheese (optional) ⓘ
Instructions
- In a large kettle, brown the salt pork until crisp.
- Add the onions and garlic, and sauté until the onions are tender.
- Add the zucchini, cabbage, bay leaf, and water.
- Bring the mixture to a boil.
- Cover and simmer for 45 minutes.
- Stir in the green beans, tomatoes, spaghetti, salt, and pepper.
- Cook for an additional 15 minutes until the spaghetti is tender.
- Discard the bay leaf.
- Serve with grated Parmesan cheese if desired.
