Ingredients

  • 1/4 lb. salt pork, diced
  • 3 large onions, chopped
  • 2 cloves garlic, crushed
  • 1 lb. zucchini, sliced
  • 1/2 lb. cabbage, cut in chunks
  • 1 large bay leaf
  • 2 qt. water
  • 1 (10 oz.) pkg. frozen green beans
  • 1 (28 oz.) can tomatoes
  • 1 c. thin spaghetti
  • salt and pepper to taste
  • grated Parmesan cheese (optional)

Instructions

  1. In a large kettle, brown the salt pork until crisp.
  2. Add the onions and garlic, and sauté until the onions are tender.
  3. Add the zucchini, cabbage, bay leaf, and water.
  4. Bring the mixture to a boil.
  5. Cover and simmer for 45 minutes.
  6. Stir in the green beans, tomatoes, spaghetti, salt, and pepper.
  7. Cook for an additional 15 minutes until the spaghetti is tender.
  8. Discard the bay leaf.
  9. Serve with grated Parmesan cheese if desired.
