Mistletoe Salad
A vibrant, crunchy vegetable salad with a sweet and tangy dressing, perfect for potlucks, picnics, or as a refreshing side dish for gatherings.
Ingredients
- 1 can French-cut green beans, drained ⓘ
- 1 can LeSueur small peas, drained ⓘ
- 1 can white corn (use liquid) ⓘ
- 1 medium jar pimento ⓘ
- 1 cup chopped celery ⓘ
- 1 cup chopped green onion (use tops too) ⓘ
- 1 cup chopped green pepper ⓘ
- 1/2 cup oil ⓘ
- 3/4 cup sugar ⓘ
- 3/4 cup vinegar ⓘ
- 1 tablespoon water ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon pepper ⓘ
Instructions
- Simmer the dressing ingredients (oil, sugar, vinegar, water, salt, pepper) for 2 minutes and then allow to cool.
- Add the cooled dressing to the drained vegetables and pimentos.
- Mix well to combine all ingredients thoroughly.
- Store the salad in glass jars and refrigerate.
- Keeps a long time.
