Ingredients

  • 1 can French-cut green beans, drained
  • 1 can LeSueur small peas, drained
  • 1 can white corn (use liquid)
  • 1 medium jar pimento
  • 1 cup chopped celery
  • 1 cup chopped green onion (use tops too)
  • 1 cup chopped green pepper
  • 1/2 cup oil
  • 3/4 cup sugar
  • 3/4 cup vinegar
  • 1 tablespoon water
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Simmer the dressing ingredients (oil, sugar, vinegar, water, salt, pepper) for 2 minutes and then allow to cool.
  2. Add the cooled dressing to the drained vegetables and pimentos.
  3. Mix well to combine all ingredients thoroughly.
  4. Store the salad in glass jars and refrigerate.
  5. Keeps a long time.
