Ingredients

  • 2 cups broccoli florets
  • 1 large potato, 3/4-inch cubes
  • 2 carrots, 1/3-inch slices
  • 1/2 cup sour cream
  • 1 cup milk
  • 2 tablespoons flour
  • 1/2 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 tablespoon coriander powder
  • pinch garlic powder
  • 1 1/2 teaspoons salt
  • oil for deep frying

Instructions

  1. Steam the broccoli until tender.
  2. Deep fry the potato on high heat until golden and tender.
  3. Deep fry the carrots until tender, then drain and set aside the vegetables.
  4. In a saucepan, combine milk, sour cream, and flour to make a creamy sauce.
  5. Add turmeric, cumin powder, coriander powder, garlic powder, and salt to the sauce, stirring well.
  6. Add the steamed broccoli, fried potatoes, and carrots to the sauce.
  7. Simmer for a few minutes until flavors meld and the curry is heated through.
  8. Serve hot with rice or bread.
