Ingredients

  • 1 1/2 cups chocolate wafers, finely crushed
  • 1/3 cup butter
  • 1/2 Tbsp. sugar
  • 2 squares sweet chocolate
  • 2 (8 oz.) packages cream cheese
  • 4 eggs
  • 1/2 cup sugar
  • 2 tsp. instant coffee

Instructions

  1. Microwave butter for 30 seconds on High.
  2. Combine melted butter, finely crushed chocolate wafers, and 1/2 Tbsp. sugar.
  3. Press mixture into the bottom of an 8-inch round microwave-safe pie dish to form the crust.
  4. Microwave on High for 1 1/2 minutes; let the crust cool.
  5. Melt the sweet chocolate in the dish for 2 minutes or until smooth.
  6. Microwave cream cheese until soft.
  7. Combine melted chocolate, cream cheese, eggs, 1/2 cup sugar, instant coffee, and a pinch of salt.
  8. Mix until smooth and well blended.
  9. Pour the filling over the cooled crust.
  10. Microwave at Medium power for 14 minutes or until the center is set, turning the dish twice during cooking.
  11. Refrigerate for at least 4 hours before serving.
