Mock Date Pudding

A moist, spiced fruit and vegetable pudding infused with warm flavors of cinnamon, nutmeg, and ginger, perfect for dessert or layered with whipped cream and bananas for added indulgence.

Ingredients

  • 2 c. grated apples
  • 2 c. grated carrots
  • 1 1/4 c. grated potatoes
  • 2 c. sugar
  • 2 eggs
  • 4 c. flour
  • 1 c. chopped dates
  • 2 c. raisins
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1/2 tsp. cinnamon

Instructions

  1. Mix together all the ingredients in the order given.
  2. Pour the mixture into a greased baking dish.
  3. Bake at 350°F (175°C) for 1 hour until cooked through and golden.
  4. Allow to cool, then cut into cubes.
  5. Layer the cubes in a bowl with whipped cream and bananas, if desired.
