Mock Wild Rice Stuffing

Ingredients

  • 1/4 cup butter
  • 1 1/3 cup Minute rice
  • 1/4 cup chopped onion
  • 1/2 pound fresh mushrooms, chopped
  • 1 cup chopped celery
  • 1/4 cup chopped celery leaves
  • 1 1/2 teaspoon salt
  • dash of pepper
  • 1/4 teaspoon marjoram
  • pinch of sage
  • pinch of thyme
  • 1 1/2 cup water

Instructions

  1. Melt butter in a large saucepan.
  2. Add rice, onion, mushrooms, celery, celery leaves, salt, pepper, and spices.
  3. Sauté over medium heat, stirring constantly, for 8 to 10 minutes or until lightly browned.
  4. Add water and mix just enough to moisten all rice.
  5. Bring to a boil over high heat.
  6. Reduce heat and simmer for 2 minutes.
  7. Fluff rice gently once or twice with a fork and remove from heat.
  8. Add pecans and mix lightly with a fork.
  9. Spoon stuffing into poultry without packing tightly.
  10. Roast immediately.
