Ingredients

  • 10 lb potatoes (Red Bliss preferred)
  • 6 stalks celery
  • 1 large green pepper
  • 1 medium onion (optional)
  • 2 large red tomatoes
  • 3 hard-cooked eggs
  • 2 Tbsp sweet pickle chips
  • salt
  • pepper
  • Dukes mayonnaise
  • 3 cubes beef bouillon

Instructions

  1. Peel and dice the potatoes into small, bite-sized pieces.
  2. Boil the potatoes in water flavored with beef bouillon until just tender.
  3. Drain and cool the potatoes.
  4. Add chopped celery, green pepper, onion (if using), chopped tomatoes, chopped eggs, and sweet pickle chips to the potatoes.
  5. Mix everything together with mayonnaise.
  6. Garnish with additional chopped tomato and green pepper before serving.
