Ingredients

  • 1 pkg. cooked, deboned, and cut-up chicken
  • 1 can cream of chicken soup
  • 3/4 cup milk
  • 2 pkg. frozen peas and carrots
  • 1 stick margarine
  • 1 cup chicken broth
  • 1 small pkg. Pepperidge Farm cornbread stuffing
  • 1 small onion or 3 teaspoons dried onion

Instructions

  1. Place the cut-up cooked chicken in a 9 x 12-inch baking pan.
  2. In a saucepan, mix the cream of chicken soup, milk, thawed peas and carrots, and chopped onion.
  3. Heat the mixture until blended and the vegetables are slightly cooked.
  4. Pour the mixture over the chicken in the baking pan.
  5. Melt the margarine and pour over the cornbread stuffing.
  6. Add 1 cup of chicken broth to the stuffing and stir well.
  7. Spread the stuffing mixture over the chicken and vegetable mixture.
  8. Bake at 350°F for 45 minutes until heated through and golden.
