Ingredients

  • 1 lb margarine
  • 2 cups sugar
  • 6 eggs
  • 1 1/2 cups flour
  • 2 oz real lemon extract
  • 1 lb golden raisins
  • 1 cup glazed pineapple
  • 2 cups glazed cherries
  • 2 cups pecan halves

Instructions

  1. Cream together margarine and sugar until fluffy, then add eggs, flour, and lemon extract and mix well.
  2. Fold in flour-coated fruits and nuts.
  3. Pour the batter into greased and floured pans.
  4. Bake in a preheated oven at 250°F (120°C) for 1 hour, placing a pan of water in the oven for moisture.
  5. Cool the cake in the pans, then remove and wrap in a hot damp towel (can soak with rum).
  6. Once cooled, remove the towel, wrap the cake, and refrigerate.
