Ingredients

  • 3 1/2 cups sifted flour
  • 3 cups sugar
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 1 1/4 teaspoons nutmeg
  • 1 1/2 teaspoons salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 2 cups canned pumpkin
  • 3/4 cup walnuts

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix together sifted flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  3. Break eggs into the mixture and stir well.
  4. Add vegetable oil and water, mixing until all ingredients are combined.
  5. Stir in canned pumpkin until just incorporated, being careful not to overmix.
  6. Pour batter into two greased loaf pans (approximately 10 1/4 x 3 5/8 x 2 5/8 inches).
  7. Sprinkle chopped walnuts over the top of each loaf.
  8. Bake for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from oven and turn out onto a rack to cool before slicing.
