Ingredients

  • 2 c. all-purpose flour
  • 1 c. old fashioned rolled oats
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 sticks unsalted butter
  • 1 1/3 c. dark brown sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 12 oz. semi-sweet chocolate, cut into large chunks

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a medium bowl, whisk together flour, oats, baking soda, and salt.
  3. In a large bowl, with an electric mixer, cream the butter until smooth.
  4. Beat in the dark brown sugar until well combined.
  5. Add eggs one at a time, beating after each addition, then mix in vanilla extract.
  6. On low speed, gradually blend in the flour mixture, stirring the last bits with a wooden spoon.
  7. Stir in the chocolate chunks until evenly distributed.
  8. Drop spoonfuls of dough onto baking sheets lined with parchment paper.
  9. Bake for approximately 15 minutes or until edges are golden.
  10. Allow cookies to cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
