Ingredients

  • 3 oz. lemon jello
  • 1 cup boiling water
  • 1 cup mayonnaise
  • 1 cup crushed pineapple with juice
  • 2 tsp. grated onion
  • 1/4 green pepper, chopped
  • 1 can shrimp
  • 1 glass pimento cheese
  • 3 medium size grated carrots

Instructions

  1. Mix the lemon jello with boiling water and let it cool.
  2. Add mayonnaise, crushed pineapple with juice, grated onion, chopped green pepper, shrimp, pimento cheese, and grated carrots to the cooled jello.
  3. Pour the mixture into a mold and refrigerate until set.
