My Western Beans

Ingredients
- 1 cup dry mixed red and white beans ⓘ
- 4 cups water ⓘ
- 4 slices bacon
- 8 oz ground beef ⓘ
- 1 medium onion, chopped ⓘ
- 1/2 medium green pepper, chopped ⓘ
- 2 cloves garlic, minced ⓘ
- 1/4 to 1/2 cup salsa ⓘ
- 1/2 teaspoon liquid smoke ⓘ
- 1/2 teaspoon to 1 tablespoon chili powder ⓘ
- 1/2 teaspoon ground cumin ⓘ
- 2 tablespoons ketchup ⓘ
Instructions
- Soak beans in water overnight or bring to a boil for one minute, then turn off and soak for 2 to 3 hours until soft.
- Cook the soaked beans until soft.
- Fry bacon slices until crispy and remove.
- In the bacon fat, cook ground beef until browned.
- Add chopped onion, green pepper, and minced garlic to the beef and sauté until soft.
- Add the cooked beans to the mixture.
- Stir in salsa, liquid smoke, chili powder, cumin, and ketchup.
- Let the mixture cook for several hours in a slow cooker, stirring occasionally.
- Adjust seasonings as needed before serving.
