Ingredients

  • 1 cup dry mixed red and white beans
  • 4 cups water
  • 4 slices bacon
  • 8 oz ground beef
  • 1 medium onion, chopped
  • 1/2 medium green pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 to 1/2 cup salsa
  • 1/2 teaspoon liquid smoke
  • 1/2 teaspoon to 1 tablespoon chili powder
  • 1/2 teaspoon ground cumin
  • 2 tablespoons ketchup

Instructions

  1. Soak beans in water overnight or bring to a boil for one minute, then turn off and soak for 2 to 3 hours until soft.
  2. Cook the soaked beans until soft.
  3. Fry bacon slices until crispy and remove.
  4. In the bacon fat, cook ground beef until browned.
  5. Add chopped onion, green pepper, and minced garlic to the beef and sauté until soft.
  6. Add the cooked beans to the mixture.
  7. Stir in salsa, liquid smoke, chili powder, cumin, and ketchup.
  8. Let the mixture cook for several hours in a slow cooker, stirring occasionally.
  9. Adjust seasonings as needed before serving.
