- Combine flour, salt, and herbs in a paper bag, shaking to mix well.
- Place chicken pieces one at a time into the bag and shake until coated.
- Pour oil into a large pot with a tight-fitting lid and heat.
- Add chicken pieces to the hot oil and cook until browned.
- Add chopped onions and canned tomatoes to the pot.
- Cover and cook for 1 hour or until chicken is tender.
- Let cool, then remove meat from the chicken bones and return the meat to the pot.
- Add frozen lima beans and corn to the stew.
- Simmer uncovered for 30 minutes.
- If needed, thicken the stew with flour and water, then stir into the stew.
- Simmer for an additional 10 minutes before serving.
