Ingredients

  • 3 lb. chicken pieces
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon fresh celery leaves
  • 1/4 cup onions, chopped
  • 1/4 cup oil
  • 2 pint canned tomatoes
  • 1 pint frozen lima beans
  • 1 pint frozen corn
  • dash garlic powder
  • dash thyme
  • dash basil

Instructions

  1. Combine flour, salt, and herbs in a paper bag, shaking to mix well.
  2. Place chicken pieces one at a time into the bag and shake until coated.
  3. Pour oil into a large pot with a tight-fitting lid and heat.
  4. Add chicken pieces to the hot oil and cook until browned.
  5. Add chopped onions and canned tomatoes to the pot.
  6. Cover and cook for 1 hour or until chicken is tender.
  7. Let cool, then remove meat from the chicken bones and return the meat to the pot.
  8. Add frozen lima beans and corn to the stew.
  9. Simmer uncovered for 30 minutes.
  10. If needed, thicken the stew with flour and water, then stir into the stew.
  11. Simmer for an additional 10 minutes before serving.
