  • 1/4 tsp. pepper
  • 6 medium zucchini
  • 1 1/3 c. part-skim Ricotta cheese

Instructions

  1. To prepare the sauce, heat corn oil in a large nonstick skillet.
  2. Add ground veal and crushed garlic; sauté until veal loses its pink color.
  3. Stir in chopped canned tomatoes, tomato paste, water, beef broth seasoning, onion flakes, basil, oregano, salt, allspice, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes, stirring occasionally. Remove from heat.
  5. While the sauce is cooking, steam the whole zucchini for 5 minutes.
  6. Let the zucchini cool, then cut lengthwise into 1/4-inch slices.
  7. Preheat oven to 350°F (175°C).
  8. Spray a 12 x 8-inch baking dish with nonstick cooking spray.
  9. Layer sauce, zucchini slices, ricotta cheese, mozzarella, and Parmesan, beginning and ending with sauce.
  10. Bake uncovered for 1 hour.
  11. Remove from oven and let stand for 10 minutes before cutting.
