Ingredients

  • 1 medium onion, chopped
  • 1 cup celery, chopped
  • 2 tablespoons margarine
  • 2 to 3 teaspoons poultry seasoning
  • 2 to 3 teaspoons sage
  • 1 teaspoon oregano, crushed
  • 2 slices whole wheat bread, cubed
  • 1 can corn, drained
  • 1/2 cup chopped pecans
  • 1 cup cornmeal
  • 1 cup flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 stick margarine, melted

Instructions

  1. Grease a 9 x 5-inch loaf pan.
  2. Cook chopped onion and celery in 2 tablespoons margarine until tender, about 5 minutes.
  3. Stir in poultry seasoning, sage, and oregano; mix well.
  4. Remove from heat and set aside.
  5. Add bread cubes, drained corn, and chopped pecans; mix thoroughly.
  6. Combine cornmeal, flour, sugar, baking powder, and salt in a separate bowl.
  7. Add milk and melted margarine to the dry ingredients and mix well.
  8. Add eggs and mix until combined.
  9. Add the vegetable mixture to the batter and mix evenly.
  10. Spread the batter into the prepared loaf pan.
  11. Bake at 350°F for 45 to 50 minutes until golden and cooked through.
  12. Cool in the pan for 15 minutes, then remove the loaf.
  13. Store leftovers in the refrigerator.
