No-Time-At-All Stuffing Loaf

Ingredients
- 1 medium onion, chopped ⓘ
- 1 cup celery, chopped ⓘ
- 2 tablespoons margarine ⓘ
- 2 to 3 teaspoons poultry seasoning ⓘ
- 2 to 3 teaspoons sage ⓘ
- 1 teaspoon oregano, crushed ⓘ
- 2 slices whole wheat bread, cubed ⓘ
- 1 can corn, drained ⓘ
- 1/2 cup chopped pecans ⓘ
- 1 cup cornmeal ⓘ
- 1 cup flour ⓘ
- 2 tablespoons sugar ⓘ
- 4 teaspoons baking powder ⓘ
- 1/2 teaspoon salt ⓘ
- 1 cup milk ⓘ
- 1 stick margarine, melted ⓘ
Instructions
- Grease a 9 x 5-inch loaf pan.
- Cook chopped onion and celery in 2 tablespoons margarine until tender, about 5 minutes.
- Stir in poultry seasoning, sage, and oregano; mix well.
- Remove from heat and set aside.
- Add bread cubes, drained corn, and chopped pecans; mix thoroughly.
- Combine cornmeal, flour, sugar, baking powder, and salt in a separate bowl.
- Add milk and melted margarine to the dry ingredients and mix well.
- Add eggs and mix until combined.
- Add the vegetable mixture to the batter and mix evenly.
- Spread the batter into the prepared loaf pan.
- Bake at 350°F for 45 to 50 minutes until golden and cooked through.
- Cool in the pan for 15 minutes, then remove the loaf.
- Store leftovers in the refrigerator.
