Ingredients

  • 1 cup butter
  • 1 cup raisins
  • 1 cup blackberry jam
  • 1 cup peach preserves
  • 1 cup pear preserves
  • 3 cups sugar
  • 4 cups flour
  • 1 cup buttermilk
  • 2 teaspoons soda
  • 2 teaspoons cloves
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 4 tablespoons cocoa
  • 6 eggs
  • 1 cup strawberry preserves

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs one at a time, mixing well after each addition.
  3. Sift flour, cloves, allspice, and nutmeg together.
  4. Stir in blackberry jam, peach preserves, pear preserves, and strawberry preserves into the mixture.
  5. Sprinkle flour over raisins and chopped nuts, then fold into the batter.
  6. Gradually add the flour mixture and buttermilk (with soda dissolved in the buttermilk), alternating additions.
  7. Mix cocoa with warm water to form a paste and add to the batter.
  8. Stir in one tablespoon of water to thin the mixture slightly.
  9. Pour batter into a prepared baking pan.
  10. Bake at 325°F (163°C) until a toothpick inserted comes out clean, approximately 45 minutes.
  11. Once cooled, ice the cake with Fudge Icing.
