Ingredients

  • 1 pkg. medium egg noodles
  • 4 Tbsp. melted butter
  • 1/8 tsp. nutmeg
  • 1/2 cup Swiss or Gruyere cheese, grated
  • 1/4 tsp. pepper
  • 2 pkg. frozen spinach
  • 1 Tbsp. lemon juice
  • 1 clove garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup grated Italian cheese

Instructions

  1. Cook the egg noodles according to the package directions and place in a casserole dish.
  2. Cook the frozen spinach according to the package directions; set aside.
  3. Combine melted butter, olive oil, minced garlic, nutmeg, pepper, and lemon juice; pour over spinach and toss well.
  4. Add the spinach mixture and grated cheeses to the cooked noodles in the casserole, reserving 1/4 cup of the Italian cheese.
  5. Toss lightly to combine.
  6. Sprinkle the remaining cheese over the top.
  7. Bake for 5 minutes at 475°F or until the cheese is melted.
