Ingredients

  • 3 1/2 cups flour
  • 3 teaspoons baking soda
  • 3 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 3 cups sugar
  • 2/3 cup water
  • 4 eggs
  • 1 1/2 teaspoons salt
  • 1 1/2 cups chopped nuts
  • 2 cups cooked sweet potatoes
  • 1 cup white raisins

Instructions

  1. Beat the eggs and add the mashed sweet potatoes.
  2. Mix dry ingredients together: flour, baking soda, cinnamon, nutmeg, salt, and sugar.
  3. Add the dry mixture to the egg and sweet potato mixture and stir well.
  4. Fold in the chopped nuts and white raisins.
  5. Gradually add water while stirring until the batter is well combined.
  6. Pour the batter into a greased baking pan.
  7. Bake at 350°F (175°C) for 1 hour or until the top cracks and a toothpick inserted in the center comes out clean.
  8. Let the bread cool slightly before slicing.
  9. Serve with cream cheese spread on top or alongside as desired.
