Ingredients

  • 1 c. finely chopped peanuts
  • 1/2 c. whole bran cereal
  • 3/4 c. all-purpose flour
  • 1/3 c. sugar
  • 1 1/2 tsp. double-acting baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 3/4 c. milk
  • 3 Tbsp. salad oil
  • 2 Tbsp. shredded orange peel
  • 1/3 c. sugar

Instructions

  1. Preheat oven to 400°.
  2. Grease a 12 cup muffin pan.
  3. In a medium bowl, mix peanuts, bran cereal, flour, sugar, baking powder, and salt with a fork.
  4. In a small bowl, beat the egg slightly and stir in milk and oil.
  5. Add the egg mixture all at once to the flour mixture.
  6. Stir just until flour is moistened. Batter will be lumpy.
  7. Spoon batter into muffin pan cups.
  8. In a small bowl, combine 2 tablespoons shredded orange peel, chopped nuts, and 1/3 cup sugar. Sprinkle over muffins.
  9. Bake for 25 minutes or until golden and a toothpick inserted in the center comes out almost clean.
