- In a large bowl, with an electric mixer, blend sugars at medium speed.
- Add softened butter and mix to form a grainy paste, scraping down the sides of the bowl.
- Add eggs and vanilla extract, beat at medium speed until fully combined.
- Add the flour mixture, chopped pecans, and chopped white chocolate, blend at low speed until just combined.
- Do not overmix.
- Drop rounded tablespoons of dough onto ungreased cookie sheets, spacing them about 2 inches apart.
- Bake for 20-22 minutes or until edges turn golden brown.
- Use a spatula to transfer cookies immediately to a cool, flat surface.
