Ingredients

  • 1 1/4 cup boiling water
  • 1 1/4 cup oatmeal
  • 1/2 cup oil
  • 1 1/4 cup flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 eggs
  • 2 egg whites
  • 1 cup brown sugar
  • 1 cup white sugar

Instructions

  1. Pour boiling water over oatmeal and mix well.
  2. Add oil to the oatmeal mixture.
  3. In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Combine the dry ingredients with the oatmeal mixture.
  5. Add the eggs, brown sugar, and white sugar; mix until well combined.
  6. Pour the batter into a greased and floured 13 x 9-inch baking pan.
  7. Bake in a preheated oven at 350°F (175°C) for 30 to 35 minutes.
  8. Remove from oven and while still hot, spread with the reserved egg yolks or desired topping.
