Oatmeal-Date Bars
Chewy oatmeal-date bars combine sweet dates, hearty oats, and a hint of lemon for a delicious, portable treat perfect for snacking or dessert lovers. Naturally sweet and satisfying.

- Combine chopped dates, water, and lemon juice in a medium saucepan. Bring to a boil, then reduce heat and simmer uncovered for 5 minutes or until mixture thickens, stirring frequently.
- Set the date mixture aside to cool slightly.
- Cream the softened butter; gradually add brown sugar, beating well at medium speed until light and fluffy.
- Add vanilla extract and beat well.
- In a separate bowl, combine oats, whole-wheat flour, baking powder, and salt; add to the creamed mixture, stirring until the mixture resembles coarse meal.
- Press 2 cups of the oat mixture evenly into a 9-inch square baking pan coated with cooking spray; set aside the remaining oat mixture.
- Bake at 375°F (190°C) for 5 minutes or until the crust looks puffed.
- Spread the prepared date mixture evenly over the crust.
- Top with the remaining oat mixture.
- Bake at 375°F (190°C) for an additional 20 minutes or until golden brown.
- Cool the bars in the pan on a wire rack.
- Cut into 16 bars and serve.
