Ingredients

  • 1 1/2 cups pitted whole dates, chopped
  • 3/4 cup water
  • 2 1/2 Tbsp lemon juice
  • 1/3 cup butter, softened
  • 2/3 cup firmly packed brown sugar
  • 1 tsp vanilla extract
  • 1 cup regular oats
  • 1 cup whole-wheat flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • vegetable cooking spray

Instructions

  1. Combine chopped dates, water, and lemon juice in a medium saucepan. Bring to a boil, then reduce heat and simmer uncovered for 5 minutes or until mixture thickens, stirring frequently.
  2. Set the date mixture aside to cool slightly.
  3. Cream the softened butter; gradually add brown sugar, beating well at medium speed until light and fluffy.
  4. Add vanilla extract and beat well.
  5. In a separate bowl, combine oats, whole-wheat flour, baking powder, and salt; add to the creamed mixture, stirring until the mixture resembles coarse meal.
  6. Press 2 cups of the oat mixture evenly into a 9-inch square baking pan coated with cooking spray; set aside the remaining oat mixture.
  7. Bake at 375°F (190°C) for 5 minutes or until the crust looks puffed.
  8. Spread the prepared date mixture evenly over the crust.
  9. Top with the remaining oat mixture.
  10. Bake at 375°F (190°C) for an additional 20 minutes or until golden brown.
  11. Cool the bars in the pan on a wire rack.
  12. Cut into 16 bars and serve.
