Ingredients

  • 1 cup quick oats
  • 1 cup hot low-fat milk
  • 3/4 cup pumpkin
  • 2 eggs
  • 1/4 cup margarine
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup raisins
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine quick oats and hot low-fat milk and let stand for 5 minutes.
  3. Stir in pumpkin, beaten eggs, and melted margarine into the oatmeal mixture.
  4. In a separate bowl, mix together all-purpose flour, sugar, baking powder, salt, ground cinnamon, and ground nutmeg.
  5. Gradually add the dry ingredients to the oatmeal mixture, stirring until just combined.
  6. Fold in raisins and chopped pecans.
  7. Pour the batter into a greased 9 x 5-inch loaf pan.
  8. Bake for 55 to 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool on a wire rack before slicing.
