Ingredients

  • 1 1/4 cups butter flavored Crisco
  • 1 1/2 cups brown sugar
  • 1 cup sugar
  • 3 eggs
  • 1 1/4 cups crunchy peanut butter
  • 4 1/2 cups oatmeal
  • 2 teaspoons baking soda
  • 1 cup chocolate chips
  • 1 cup butterscotch chips
  • 1 cup walnuts, chopped

Instructions

  1. Cream the shortening and sugars together until well blended.
  2. Beat in the eggs, then add the peanut butter and mix thoroughly.
  3. Stir in the oatmeal and baking soda until combined.
  4. Add the chocolate chips, butterscotch chips, and chopped walnuts if desired.
  5. Drop spoonfuls of dough onto ungreased cookie sheets.
  6. Bake at 350°F (175°C) for 10 to 11 minutes.
  7. Allow cookies to sit on the baking sheets for 2 minutes, then transfer to wire racks to cool.
