Ingredients

  • 1/3 c. margarine, softened
  • 2/3 c. firmly packed brown sugar
  • 1 egg, beaten
  • 1/2 tsp. lemon extract
  • 1/4 tsp. vanilla extract
  • 1 1/2 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. ground allspice
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1/4 c. unsweetened apple juice
  • 56 raisins

Instructions

  1. Cream margarine and brown sugar until light and fluffy.
  2. Add beaten egg and flavorings; mix well.
  3. Combine flour and next five ingredients, mixing well.
  4. Add to creamed mixture alternately with apple juice, beginning and ending with flour, and mix well after each addition.
  5. Drop by rounded teaspoonfuls 2 inches apart on cookie sheets sprayed with cooking spray.
  6. Press a raisin in the center of each cookie.
  7. Bake at 325°F for 15 to 20 minutes.
  8. Cool slightly on cookie sheets before removing.
