Ingredients

  • 1 ham bone
  • 10 cups water
  • 1 package dried lentils
  • 4 medium carrots, diced
  • 1 large onion, diced
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1 bay leaf

Instructions

  1. Combine all ingredients in a large pot or pressure cooker.
  2. Cover and simmer for 1 hour or until lentils are tender (about 30 minutes in a pressure cooker).
  3. Remove the ham bone from the soup.
  4. Strip off bits of meat from the ham bone and return them to the soup.
  5. Remove the bay leaf from the soup.
  6. Serve the soup with 2 tablespoons of vinegar on top.
  7. Optional: Serve with croutons.
