Ingredients

  • 1 1/2 cups all purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup peanut butter, chunky or smooth

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, stir together flour, cornstarch, and baking soda.
  3. In a large bowl, beat butter for 10 seconds.
  4. Beat in granulated sugar and light brown sugar.
  5. Add egg, vanilla extract, and salt. Beat until thick and light, about 1 minute.
  6. Add peanut butter and mix well.
  7. Stir in the flour mixture until combined.
  8. Using 1 1/2 tablespoons of dough for each cookie, roll into balls and arrange on a baking sheet, leaving 2-3 inches between each.
  9. Dip a fork into sugar and press on top of each cookie in two directions to flatten and create a crosshatch pattern.
  10. Bake until golden brown around the edges, about 12 minutes.
  11. Transfer cookies to a rack and cool.
