Ingredients

  • 3/4 cup chopped onion
  • 3 cups flour
  • 1/4 cup sugar
  • 1/2 cup Parmesan cheese
  • 2 tablespoons Parmesan cheese (for topping)
  • 5 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1/3 cup melted butter
  • 1 cup buttermilk
  • 2 eggs

Instructions

  1. Combine the first seven ingredients, saving 2 tablespoons of Parmesan cheese for topping.
  2. Mix together melted butter, buttermilk, eggs, and grated zucchini.
  3. Carefully stir the wet mixture into the flour mixture until just combined.
  4. Spoon the batter into a greased 9-inch round baking pan.
  5. Sprinkle with the remaining 2 tablespoons of Parmesan cheese on top.
  6. Bake at 350°F for 45 to 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool for 10 minutes before removing from the pan.
