Ingredients

  • 16 oz. green beans
  • 2 Tbsp. butter
  • 4 oz. mushrooms, drained (keep juice)
  • 8 oz. water chestnuts, drained
  • ½ cup finely chopped onion
  • 4 strips crisp bacon
  • French fried onions
  • 1 stick butter, melted
  • milk to combine with mushroom juice to equal 1½ cups
  • 1½ cups sharp Cheddar
  • 2 tsp. soy sauce
  • ¼ tsp. Tabasco

Instructions

  1. Melt 2 tablespoons butter and sauté green beans, mushrooms, water chestnuts, onion, and bacon strips until vegetables are tender.
  2. Drain the liquid and set aside the mushroom juice.
  3. Melt the stick of butter in a saucepan, then whisk in 4 tablespoons flour to make a roux.
  4. Gradually add the reserved mushroom juice mixed with enough milk to reach 1½ cups, stirring until the sauce thickens.
  5. Remove from heat and stir in 1½ cups sharp cheddar, 2 teaspoons soy sauce, ¼ teaspoon Tabasco, and season with salt and pepper to taste.
  6. In a casserole dish, combine the cooked beans and vegetables with the creamy sauce and crumbled bacon.
  7. Sprinkle French fried onion rings over the top.
  8. Bake at 350°F for 30 to 40 minutes until the dish is bubbly and lightly browned.
