Ingredients

  • 2 cups red candied cherries
  • 1 1/2 cups raisins
  • 2 cups bourbon whiskey
  • 1 1/2 cups butter
  • 2 1/3 cups sugar
  • 2 1/3 cups brown sugar
  • 6 eggs
  • 5 cups sifted cake flour
  • 4 cups chopped pecans
  • 2 teaspoons ground nutmeg
  • 1 teaspoon baking powder

Instructions

  1. Combine red candied cherries, raisins, and bourbon whiskey in a bowl.
  2. Cover and let stand overnight.
  3. Drain the soaked fruit and reserve the bourbon.
  4. Preheat oven to 275°F (135°C).
  5. Cream butter and sugars until light and fluffy.
  6. Add egg yolks, a little at a time, and mix well.
  7. In a separate bowl, combine 1/2 cup of sifted cake flour with ground nutmeg, baking powder, and chopped pecans.
  8. Set aside the dry mixture.
  9. Add remaining flour and bourbon alternately to the butter mixture, beating well after each addition.
  10. Beat egg whites until stiff peaks form.
  11. Gently fold egg whites into the batter.
  12. Fold in soaked fruit and pecan flour mixture.
  13. Pour batter into a greased 10-inch tube pan lined with greased waxed paper.
  14. Bake for 3 1/2 hours.
  15. Allow to cool before removing from pan.
