- Combine red candied cherries, raisins, and bourbon whiskey in a bowl.
- Cover and let stand overnight.
- Drain the soaked fruit and reserve the bourbon.
- Preheat oven to 275°F (135°C).
- Cream butter and sugars until light and fluffy.
- Add egg yolks, a little at a time, and mix well.
- In a separate bowl, combine 1/2 cup of sifted cake flour with ground nutmeg, baking powder, and chopped pecans.
- Set aside the dry mixture.
- Add remaining flour and bourbon alternately to the butter mixture, beating well after each addition.
- Beat egg whites until stiff peaks form.
- Gently fold egg whites into the batter.
- Fold in soaked fruit and pecan flour mixture.
- Pour batter into a greased 10-inch tube pan lined with greased waxed paper.
- Bake for 3 1/2 hours.
- Allow to cool before removing from pan.
