Ingredients

  • 2 c. diced potatoes
  • 1 c. carrot slices
  • 1/2 c. celery slices
  • 1/4 c. chopped onion
  • 1 1/2 tsp. salt
  • 1/2 c. Parmesan cheese
  • 1/4 tsp. pepper
  • 2 c. boiling water
  • 1/4 c. butter
  • 1/4 c. flour
  • 2 c. milk

Instructions

  1. Combine potatoes, carrots, celery, onion, salt, and pepper in a pot.
  2. Add boiling water and simmer until vegetables are tender.
  3. Make a white sauce by melting butter, stirring in flour, then gradually adding milk to thicken.
  4. Stir the white sauce into the cooked vegetables.
  5. Add Parmesan cheese and simmer a little longer before serving.
