Ingredients

  • 1 lb. yellow squash, sliced
  • 1 tsp. sugar
  • 1/2 c. mayonnaise
  • 1/2 c. onion, minced
  • 1/4 c. green pepper, finely chopped
  • 1/2 c. pecans, chopped
  • 1 egg, slightly beaten
  • 1/2 c. Cheddar cheese, grated
  • salt to taste
  • pepper to taste
  • bread or cracker crumbs

Instructions

  1. Cook the yellow squash, drain, and mash.
  2. Add sugar, mayonnaise, minced onion, chopped green pepper, chopped pecans, beaten egg, grated Cheddar cheese, salt, and pepper to the mashed squash and mix well.
  3. Place the mixture in a 2-quart casserole dish.
  4. Top with bread or cracker crumbs and dot with butter.
  5. Bake in a 350°F oven for 35 to 40 minutes until golden and bubbly.
